Colombia – La Arabia ORGANIC

La Arabia is an 8 hectare farm in Tolima owned by Ruben Parra. He is also growing sugar cane, fruits and yuca on additional land. 

The farm is found at an elevation of 1900-2000masl where he is growing both Caturra, Colombia and Castillo. All of his land is cultivated according to organic practises. 

The coffee is picked in 3-4 passes which means that they are returning to the same trees several times per harvest to be able to pick only ripe cherries. After picking, the cherries are brought to the beneficio where they are first floated to remove defected cherries, then processed and left to ferment for between 36-48 hours depending on climate.  

After the fermentation the coffee is rinsed several times before it is moved to dry in parabolic driers for between 15-20 days. The slower drying improves the quality and longevity of the coffee.
