The process is called reposado - the coffee cherries were left in plastic barrels for 48 hours before being processed as white honey ( all mucilage removed mechanically ) and then dried on raised beds for 15-18 days. This leaves us with a coffee that taste absolutely incredible. Packed with berries and yet so elegant.
